Brown Sugar Banana Bread

Ingredients
430 g peeled, very ripe bananas
210 g all-purpose flour
1 tsp baking soda
1 tsp salt
1/2 tsp ground cinnamon
113 g unsalted butter, softened, plus a little for the pan
165 g light brown sugar
2 large eggs, at room temperature
1 tsp vanilla extract
Let’s make it
Set the oven to 350°F. Grease a 9 × 5-inch loaf pan and line it with a strip of baking parchment.
Mash the bananas in a bowl. In another bowl, stir together the flour, baking soda, salt and cinnamon.
Beat the butter with the brown sugar until lighter in color. Mix in the eggs one at a time, then add the vanilla and mashed banana.
Fold the dry mixture into the banana mixture, stopping as soon as the visible flour disappears. Spoon the batter into the prepared pan and level the surface.
Bake for about 50–60 minutes. Check the center with a skewer; it should not carry wet batter. Let the loaf settle in the pan for 10 minutes, then move it to a rack and cool before slicing.
